A table trapped inside a PDF is readable but unusable as-is: you cannot sort it, filter it or drop a formula into it. Detection relies on how the text is laid out: fields separated by two or more spaces, or by a tab, are read as separate columns. In other words, a cleanly aligned table gives the best results, whereas an uneven layout can merge columns and call for a little cleanup in your spreadsheet.
An honest note: a scanned or photographed PDF is only an image, with no real text to split into columns. Run it through the ocr tool first, which rebuilds actual text, before starting the extraction.
